Over het wijnhuis | Cascina Schiavenza maakt maar liefst 5 verschillende, unieke Barolo’s. De wijnen krijgen hun rijping op grote Slavonische vaten, en in tegenstelling tot wat de moderne etiketten doen vermoeden, hanteert Schiavenza een traditionele stijl van wijn maken. |
Wijngaard en regio | De druiven komen uit de cru Broglio in de comune (gemeente) Serralunga d’Alba in Barolo. De wijngaarden liggen op 360 meter boven zeeniveau en liggen op het zuidoosten. De bodems bevatten veel leem en kalksteen. |
Vinificatie | De druiven vergisten voor 15-20 dagen op een temperatuur van 25-30 graden Celcius, waarbij de wijn regelmatig wordt overgepompt van het ene naar het andere vat. De wijn rijpt vervolgens 30 maanden in grote vaten (20-40 hl) van Slavonisch eiken. |
