| Over het wijnhuis | De wijnen van Vincent Paris ontvangen jaarlijks hoge scores in de internationale pers en dat is niet voor niks. De Cornas-wijnen van Paris zijn traditionele Rhône-wijnen met een moderne touch. Deze krachtpatsers van Syrah zijn representatief voor wat het kleine wijndorp Cornas te bieden heeft. Cornas staat bekend als een gebied dat wijnen voortbrengt die tijd nodig hebben. Het leuke van de wijnen van Vincent Paris is dat ze ook jong al veel te bieden hebben. |
| Wijngaard en regio | Afkomstig van een wijngaard van 2,7 hectare in Cornas, een appellatie in de Noord-Rhône. De gemiddelde leeftijd van de stokken is 10 jaar. De wijngaard heeft een stijgingspercentage van 30 graden. |
| Vinificatie | Na de oogst krijgen de druiven een koude schilweking op 12 graden gedurende één week. De gisting vindt plaats in RVS, waarbij de hoed (de schilletjes die bovenkomen drijven) twee keer per dag wordt ondergedompeld. Dit wordt gedaan om kleur en smaak te onttrekken. De gisting duurt drie tot vier weken, de wijn rijpt daarna drie maanden verder in RVS. Hierna wordt de wijn overgeplaatst naar eikenhouten vaten, waarin de wijn nog een jaar verder rijpt. De vaten zijn twee tot acht jaar oud. Er wordt geen nieuw hout gebruikt. |
