Over het wijnhuis In het hart van de Barolo DOCG, in het plaatsje Castiglione Falletto, liggen de unieke cru-wijngaarden van Cavallotto. Cavallotto behoort tot de oudste producenten van Barolo, met een traditionele, op terroir gespitste stijl van wijn maken. De verschillende terroirs van de cru’s Bricco Boschis (met zijn bijzondere 'single vineyard' Vigna San Giuseppe) en Vignolo komen op fantastische wijze tot uiting in hun Nebbiolo-wijnen. Behalve Nebbiolo maakt Cavallotto onder andere een waanzinnige Barbera d’Alba Superiore.
Wijngaard en regio Afkomstig van verschillende percelen in de cru Bricco Boschis in de comune (gemeente) Castiglione Falletto in Barolo, waaronder de historische percelen 'Punto Marcello' en 'Colle Sud-Ovest'. Het zijn heuvelachtige wijngaarden met een ligging op het westen, zuidwesten, zuidoosten of zuiden.
Vinificatie De druiven worden ontsteeld. De gisting vindt plaats een gecontroleerde temperatuur van 29 graden. De 'hoed' (schilletjes die boven komen drijven) wordt regelmatig ondergedompeld, het sap regelmatig overgepompt. Hierdoor krijgt de wijn meer kleur, tannine en smaak. De totale maceratietijd is 30 tot 35 dagen. De wijn rijpt 36 tot 42 maanden op Slavonisch eiken van 20, 30, 50, 80 en 100 hectoliter. De wijn verblijft vervolgens nog 6 maanden op de fles voordat deze op de markt wordt gebracht.
Kleur Robijnrood.
Geur Rijpe kersen, zoethout, frambozen.
Smaak Krachtige, maar ook elegante Barolo met zachte tannines, rijpe fruit en aardse tonen.
Serveren bij Heerlijk bij rood vlees, bijvoorbeeld gegrilde ribeye. Ook lekker bij gerijpte kazen.

"Cask sample. Mid to deep ruby with orange tinges. Very compact nose of raspberry coulis with salty hints underneath. Very pretty, aromatic raspberry palate with firm, underlying tannins but this is still in cask and will need substantial time once this is in bottle. Energetic acidity tied to the fruit. "Alfio Cavallotto is one of the most traditional producers in Langhe. His winemaking is not only classic but old-fashioned: indigenous yeast, oak fermentation, almost no temperature control, and long maceration with submerged cap. His wines are dark and concentrated and this 2019 is no different. Earthy and smoky, it has dark cherry and blood orange aromas alongside plenty of dried fruits. There's firm acidity to the fore, as well as firm tannins, with great mid-palate extraction. There's ome stickiness on the gums now so it comes across as very austere at the moment, but it's very good on the finish. This deserves more time in bottle and consumers who appreciate the style." - Decanter
